Cauliflower Falafel
As previously stated in my Falafel burger recipe, I love falafel. It’s packed with so much flavor, vibrance, and so many herbs. What I love about this recipe is it gives you a grain, gluten, AND legume break while still getting those flavors that you are looking for.
If you’d like to make this recipe vegan you can do so by replacing the egg with a flax egg. However, if you do use a flax egg instead, make sure to allow the dough to rest in the fridge for at least 15-30 minutes before forming into falafel. This rest time will be important for making sure your cauliflower falafel hold together. If the recipe is too wet- just add a little almond flour, one tablespoon at a time.
You can pair these falafel with a giant salad, Mediterranean inspired bowl, or as a fun finger food to dip into homemade dairy free tzatziki as shown below!

NOTES
- For the cauliflower rice- you can food process a head of cauliflower at home, purchase pre riced cauliflower at the store, or even buy frozen riced cauliflower - if using the frozen kind, allow it to thaw and using a towel or cheesecloth, squeeze as much liquid out of it as possible before moving forward- this will help the falafel to crisp up!
- If subbing for flax egg to make vegan, in a small bowl mix 2 tbs flaxmeal + 1½-2 tbs hot/warm water, let it sit for about 10 minutes to thicken
- If not using trader joes onion salt, you can just use onion powder! Trader Joes onion salt contains onion, garlic, green onion, and chives.
