Chia Seed Pudding
I honestly can’t stop staring at this chia seed puddingggg. It’s so beautiful and LOADED with goodness.
I’ve posted on Instagram so many times about this being one of my favorite breakfasts and it holds true, esp in the summertime - it just always hits right and is yet another easy + convenient food option.
This chia seed pudding requires only 4 ingredients and can be topped with just about any fruit + nut/seed combo.
For me, it’s usually berries, homemade grain-free + gluten-free granola, nut butter, and some cacao nibs! So, SO good. Also- apples with cinnamon + almond butter is also a win-win combo. (pro tip: In colder months you can simmer it on the stove for grain-free oatmeal) note: this recipe gives you multiple servings.
Chia Seed Pudding

Ingredients:
- 4c Dairy Free Milk ( I used So Delicious Cashew + Almond)
- 1c chia seeds
- 2 tsp vanilla extract
- 1 tbs cinnamon
- Optional: 1-2tsp of liquid stevia, honey, or maple syrup (i use Sweet Leaf stevia)
Instructions:
- In a mixing bowl, pour in chia seeds followed by milk, vanilla, cinnamon, and if using: sweetener of choice.
- Whisk thoroughly until well combined. Transfer into jars or container(s) of choice, cover and store in fridge for 20 mins- overnight to soak. I like to leave the pudding plain and top with whatever I’m feeling the day of. Will last upto 4 days in an airtight container. Get creative with your pudding!
