Cucumber Mango Salsa
These happy, real food colors make me want to danceeeee.
After I made this salsa I put it on pretty much anything I ate for dinner for the next three days and it was d e l i c i o u s - the flavors only got better as the days went by- so feel free to prep this a day in advance.
This salsa is great for eating as a dip with tortilla chips (my favorite are Seite ) or as a topping to bring some tropical vibrance to any protein/ some tacos!

Cucumber Mango Salsa

Ingredients:
- 2 mangos, peeled and small diced
- ½ cucumber, peeled and small diced
- ½ red onion, small dice
- ¼ pineapple, peeled and small diced
- 2 limes, zested and juiced
- 1 green onion stem, sliced
- Handful cilantro, chopped
- Himalayan salt to taste
Instructions:
- Prep all ingredients and combine in a mixing bowl, tossing around to incorporate flavors.
- Test taste and add salt to your liking, you want this salsa to be refreshingly sweet yet acidic!
