Chocolate Chip Protein Bites

 

 I have a big time obsession with chocolate chip cookies and if I can get anything to taste like one while also being a grab and go protein snack? That is a huge win for me.

These protein bites taste insanely close to beloved chocolate chip cookies- in large part thanks to the protein powder I used (Designs for Health Pure Paleo protein in chocolate), however any protein that feels good to you is fine! If anything it might just make it taste more chocolatey.

Chocolate Chip Protein Bites

Ingredients

  • Flax egg: 2 tbs flax meal + 3 tbs h2o⁣
  • 1/2 c tahini⁣
  • 1 tsp vanilla extract⁣
  • 3 tbs maple syrup or honey ⁣
  • 3 tbs coconut oil, melted⁣
  • 1/3 c chocolate protein powder⁣
  • 2 tbs almond flour⁣
  • ¼ c cacao nibs ⁣
  • Sprinkle himlayan salt ⁣

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Make your flax egg by mixing 2 tbs ground flax with 3 tbs of warm water, allow you sit for about 5 minutes.
  3. Next, in a large bowl, whisk together tahini, vanilla, sweetener of choice, and coconut oil until combined.
  4. Once flag egg is ready, add it into your mixture.
  5. Next fold in your protein powder, cacao nibs, almond flour and salt.
  6. Spray a mini muffin tin with avocado oil (or grease with coconut oil) and spoon mixture into muffin molds, place in the oven and bake for 7-9 minutes, they should be crispy but still have a soft chew in the center to them!
