Paleo Granola
I am a huge texture person. I love crunchy foods (chips, popcorn, cereal, granola, the list goes on) so much so that I used to put cereal on my ice cream as a kid to get the best of both worlds.
That being said, I don’t often buy granola at the store because I'll eat the whole bag in one sitting. But every now and then I'll make it from scratch, and since I try to be a little more intentional with my grain consumption- I have fallen IN LOVE with this grain free granola!
You can use this as some crunch on a chia seed pudding, a fruit + yogurt bowl, a lil travel snack…..a bowl of cereal…….live your best life.
This is a base recipe, so you can add so many different flavorings & spices to it to make it your own. I’m lookin at you- pumpkin spice lovers
Paleo Granola

Ingredients:
- 2 c unsweetened coconut flakes or shreds
- 1 c sliced almonds- you can also just chop up some whole ones if that’s what you have on hand!
- 1 c raw pumpkin seeds
- ½ c raw sunflower seeds
- 3 tbs chia seeds
- 3 tbs hemp seeds
- 1 tsp himalayan salt
- 1 tsp ground cinnamon
- ¼ c honey or maple syrup
- ¼ c coconut oil, melted
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 300 degrees fahrenheit.
- Add all ingredients into a large mixing bowl and mix until combined.
- Spread granola mixture onto a parchment paper lined baking tray (you might have to use two or bake in separate batches depending on the size of your tray). You want to make sure it has enough space to crisp, don’t crowd it!
- Bake for 20-35 minutes, until golden in color as well as crispy in texture.
