Balsamic Tomato Salad

 
 

Waiting for the day that I am sick of tomatoes- but honestly not sure it will ever come.

ESPECIALLY when it comes to stunning organic heirlooms😩. With their colors and insane sweetness I think I could eat them like apples.

This was a dish that I made for a client’s dinner party. They love Mediterranean flavors and after being inspired by a dish within the pages of my favorite magazine, Bon Appetit, this salad came to be.

Feel free to omit the cheese in this recipe or swap it with one you enjoy more!

Balsamic Tomato Salad

prep time: 20 | Servings: 6-8

Ingredients:

  • 4 organic heirloom tomatoes, cut into wedges ⁣
  • 2 avocados, thinly sliced⁣
  • ¼ cup shelled pistachios, crushed⁣
  • ¼ red onion, thinly sliced ⁣
  • 1 handful basil leafs, thinly sliced⁣
  • Drizzle of balsamic reduction⁣
  • Drizzle of extra virgin olive oil⁣
  • Sprinkle of feta or goat cheese ⁣
  • Salt to taste⁣
  • Fresh cracked Pepper to taste⁣

Instructions:

  1. Prep all ingredients.
  2. On a plate begin laying tomato wedges and avocado slices, once all on plate, begin sprinkling with red onion, pistachios, and basil. >3. Drizzle with olive oil, balsamic, top with cheese of choice, and sprinkels of salt and pepper.
