Raw Lasagna Roll Ups
There’s something about finger foods that are always just so appealing to me. It’s like permission to just be a kid again and eat with your hands, and it even just makes me feel so much more connected to food.
Raw Lasagna is a lighter spin on the classic comfort food. Full of plant-based goodness, and fresh ingredients, it’s enough of the familiar flavors to bring you back, while also fueling you just right.
This recipe can feel a little overwhelming upon first glance but I promise you- it’s more fun than you think and would be an amazing treat to whip up for guests or even just yourself. I sit by the pool and eat these like it’s my job whenever I make them haha.
Raw Lasagna Roll Ups

Ingredients:
Cashew ricotta:
- 1 cup soaked cashews
- 1 tsp minced garlic
- juice of 2 lemons
- 3 tbs nutritional yeast
- Himalayan salt to taste
Water as needed
Broccoli pesto:1 cup riced broccoli
- ½ cup basil leaves
- ½ cup organic olive oil
- sun dried tomatoes to taste/give color
- 1/2 lemon, juiced
- 1 tsp nutritional yeast
- Himalayan salt to taste
Tomato sauce:- ½ yellow onion, small diced and sautéed on low heat until translucent
- 1 tsp sliced garlic, cooked till fragrant
- ½ cup grape tomatoes, halved, simmered till tender
- sprinkle of truffle salt
Instructions:
- All sauces are to be blended until combined but still have texture.
- Layer between thinly sliced (you can use a mandolin) zucchini, adding sprouts, sundried tomatoes, or anything else you would like between each layer and roll into hand held bites.
- Top with whatever you want!
