Tomato and Pine Nut Salad

 
 

As someone who earned herself the nickname “Misses tomato” from a family friend, I couldn’t be any more stoked for tomato season.

I was slicing up an heirloom tomato the other day and had my parents try a piece, their faces lit up when they realized how sweet they were. Real food is magic, guys! (I could honestly go on about it forever)

So here’s a recipe inspired by a glorious tomato salad I found within the pages of Bon Appetit Magazine, unfortunately, I didn’t have every ingredient on hand as the original recipe calls for, so I improvised a little.

Which by the way, if there’s anything I can encourage aside from using real ingredients for your food, don’t be afraid to go a little off-book and work with what you have- it’s all about getting in your kitchen and creating!

The more you do it, the better it becomes. Throw on some music, use a recipe that inspires you and get movin’.

Tomato and Pine Nut Salad

prep time: 15 | Servings:4-6

Ingredients:

  • ¼ c red wine vinegar⁣
  • ⅓ c pine nuts, toasted ⁣
  • 1 lb. organic cherry tomatoes, some halved, some left whole⁣
  • ¼ red onion, thinly sliced⁣
  • ¼ c extra-virgin olive oil⁣
  • Himalayan salt to taste⁣
  • 1 c small basil leaves, torn if large ⁣
  • 2 tbs balsamic glaze ⁣
  • Optional: add a soft white cheese to this dish and it becomes a totally new salad⁣ ⁣

Instructions:

  1. In a large bowl combine cherry toms, sliced red onion, basil leaves, white wine vinegar, toasted pine nuts, and extra virgin olive oil. ⁣
  2. Toss ingredients until incorporated and test taste before salting, you might be surprised at how little salt it may need.⁣ Plate salad and drizzle with balsamic glaze ⁣

    Note: if you don’t have balsamic glaze, you can pour a ½ cup of balsamic vinegar in a small sauce pan on medium-low heat, stirring occasionally and bringing to a simmer. You want the vinegar to reduce slightly. To check if it’s ready dip a spoon into it- it should glaze the back of the spoon and be thicker in consistency, like a warm honey (should take about 10 minutes or less). ⁣
