Grain Free Apple Crisp
My first ever experience with a baked peach anything was while visiting family one summer in Texas. We had all gathered at a BBQ place just outside of Austin and while the food was great, what truly left a lasting impression on me was their peach cobbler. Let me preface- I was always the kid who wanted some kind of cinnamon apple dessert at any restaurant we went to growing up. In my eyes - apple pie was way better than what any chocolate decadence could offer (I’ve since learned there’s room for both in my heart and stomach). That being said, to me, that first peach cobbler experience felt like this ultra sweet, “where have you been all my life” take on apple pie (again, room for both, but the excitement was real).
Grain Free Apple Crisp

Ingredients:
- Filling
- 6 honeycrisp apples, sliced
- 1 lemon, zested & juiced
- 3 tbs coconut sugar, can sub honey, or maple syrup
- 2 tsp vanilla extract
- 2 tbs arrowroot starch
- 1 tsp cinnamon
- Crumble
- ½ c walnuts
- ½ c pecans
- ½ c almond flour or meal
- 3 tbs flaxseed, ground
- ¼ c coconut oil, melted
- 2 tbs arrowroot starch
- 2 tbs coconut sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- pinch sea salt
- Optional: can add coconut flakes to crumble as well
Instructions:
- Preheat oven to 350 degrees F. Coat a small (9-inch) cast iron skillet with melted coconut oil.
- Mix all filling ingredients together in a bowl. Once combined, pour mixture into prepped skillet making sure it is evenly spread out.
- To prepare crumble, Pulse walnuts and pecans in a high speed blender or food processor ( you can also hand chop them) until broken down into smaller pieces.
- Add remaining ingredients and pulse until you get a crumbly texture, or fold all ingredients together by hand in a mixing bowl with a rubber spat.
- Sprinkle the crumble over the top of the peach filled skillet. Once ready, place cast iron in oven and bake until the filling is bubbling, should be around 40-45 minutes.
- Allow to cool for 5-10 minutes (if you can, I lose all patience when it comes to baked goods) and serve with your favorite ice cream, yogurt, or eat as is! Enjoy
