Vegan Veggie Chowder

 
 

Warm, cozy, loaded with nourishment, these are a few of the ways I would describe this dish.

I made this chowder for my girls during our apple crisp baking night and it did not disappoint! It’s a little more time consuming of a soup- but I promise you it’s worth it.⁣

Vegan Veggie Chowder

Ingredients:

  • 6 c vegetable broth⁣
  • 3 carrots, peeled and chopped⁣
  • 4 celery stalks, chopped ⁣
  • 1 onion, chopped⁣
  • 1 butternut squash, cubed ⁣
  • 3 large garlic cloves, sliced ⁣
  • 4-6 sage leafs, thinly sliced ⁣
  • 1 tbs dried Thyme ⁣
  • 1 tbs nutritional yeast ⁣
  • Himalayan salt to taste⁣
  • Pepper to taste ⁣
  • Avocado (or olive oil) for cooking⁣

cream base ⁣

  • 1 head of cauliflower, florets only⁣
  • 2 leeks, cleaned and chopped⁣
  • 2 green onion, chopped⁣
  • 2 large garlic cloves, sliced ⁣
  • ¼ c raw cashews⁣
  • 1 c plain almond milk ⁣

Instructions:

  1. In a soup pot on medium heat, sweat all your soup veg in avocado oil- just enough to wet the bottom of the pot. For deeper flavors you can sauté each veg one by one.
  2. Once the veg have cooked slightly (8-12 minutes) add in your herbs and seasonings, allowing all the flavors to come together.
  3. While the soup flavors are infusing, with the lid on, pour some avocado (or olive oil) into a smaller pot and sauté the leeks. You want the leeks to get a light color, next add in the green onion and garlic and cook until fragrant.
  4. When that is ready, add in cauliflower and lightly sauté. Once parts of the cauliflower have gotten color, add the remaining cream base ingredients into the pot. You want to bring the almond milk to a simmer, and allow to cook until the cauliflower is fork tender, then turn off the heat.
  5. Returning to the soup veg, pour in veg broth and allow soup to come up to a simmer as well. While the soup is simmering, take your slightly cooled, fully cooked cauliflower base and transfer into a high speed blender, slowly purée it until smooth.
  6. Once ready, pour the cream base into your soup and stir to incorporate. Season to your liking and enjoy! Sometimes, I like to brighten the flavor of this soup by squeezing some fresh lemon over my bowl, but do you!
