Gluten Free Falafel Burgers
Any time I talk about a recipe on here my gut instinct is to start by stating how much I love it- but that’s just because I really, really love food.
So insert me getting giddy about falafel (the way I do with most food) right here.
However! These are fun twist, made into larger portions, a falafel burger if you will. Of course you could always just make them whatever size you want- making their burger status optional. I think one of the best things about this recipe is the fact that you can make a bunch of it at one time, cook it off, and freeze it- so that present you can be looking out for future you when the “i don’t feel like cooking” mood kicks in.
So next time you don’t know what’s for dinner, or lunch the next day at work, these could be just the thing you’re needing.
Falafel Burgers

Ingredients:
- 1 c chopped parsley
- 1 c chopped cilantro
- 4 cloves garlic
- 1-2 lemon, juiced
- 1 tbs cumin
- 1 tsp paprika
- ½ tsp himalayan salt
- ½ tsp black pepper
- 1 can chickpeas, rinsed and drained
- ½ c almond flour (you can also use cassava flour)
Instructions:
- Add herbs, garlic, lemon juice, and spices to a food processor and blend until combined.
- Add in chickpeas and pulse until incorporated but chunky. We want texture here!
- Transfer mixture into to a mixing bowl and add almond flour, fold in to create almost a dough. Taste and adjust seasonings as needed. 4. Break mixture into 6 equal parts and create patties.
- Drizzle olive oil in large skillet on medium heat and add falafel burgers. Once golden brown, flip (this should take about 5-7 minutes) and then cook on the other side until a beautiful golden brown as well. You can also choose to bake them instead- this would take about 30-45 minutes at 375!
- You can serve them warm, wrapped in pita or a collard wrap, or just eat them with some dairy free tzatziki. Recipe can be found HERE.
Burgers can be stored fully cooked in the freezer, layered with parchment paper in an airtight container!
