Almond Butter Double Chocolate Cookies

 
 

Sometimes you just feel like you need a win, you know? These cookies- these are a win. They feel like a warm chocolatey hug. So I personally will take multiple please.

Gluten-free, dairy-free, easy to make vegan/ egg-free. I love these cookies! To me, they taste as if a brownie turned itself into a cookie. The best thing about these is you probably have most of these ingredients lying around!

Almond Butter Double Chocolate Cookies

prep time: 10 minutes | cook time: 8 minutes | Servings: 10

Ingredients:

  • 1 egg (you can sub for 1 flax meal egg!)
  • ½ cup raw almond butter
  • 2 tsp vanilla extract
  • 3 tbs maple syrup or honey
  • 3 tbs coconut oil, melted but not hot
  • 1/3 cup cacao powder
  • 2 tbs almond flour
  • ¼ tsp baking soda
  • 1 dark chocolate bar, chopped, I used Eating Evolved extra dark but you can also use ⅓ cup chocolate chips
  • Pinch of Himalayan salt

Instructions:

  1. Preheat oven to 350 degrees F.
  2. If your almond butter has separated- make sure to give it a stir. You want it to pour!
  3. In a large bowl, whisk together egg, smooth almond butter, vanilla, maple syrup, and coconut oil until well-combined.
  4. Next add in almond flour, cacao powder, salt, and baking soda.
  5. If using a chocolate bar, after you chop it, fold into the dough.
  6. You can use a spoon to scoop the dough, roll into a ball, and place the balls on a sheet tray lined with parchment paper.
  7. Bake the cookies for 8 minutes (they can burn easily so keep an eye on them!) and allow them to cool for about 5, or be like me and eat them right away
