Homemade Chocolate Peanut Butter Cups
Les and I LOVE peanut butter cups. But have you ever taken a beat to read what’s actually in them most of the time? Usually a long list of things we can’t pronounce or way too many different forms of sugar. So I knew I had to make a cleaner version that we would feel better about enjoying on a consistent basis. Also- Les Can legit eat one and be done…I don’t understand this, I need at least two. Anyone else?
Also: when buying nut or seed butter always read what’s in the ingredients: if it’s anything more than salt and the nut or seed itself I skip it.
Homemade Chocolate Peanut Butter Cups

Ingredients:
〰️ Filling:
- ½ c creamy salted peanut butter (you can sub another nut or seed butter if you’d like!)
- 1-2 tbsp maple syrup
- 1 tbsp melted coconut oil
- 1 tsp vanilla extract
- 8 tbs almond flour (can sub 4 tbs coconut flour)
〰️ Chocolate Layer
- 1 tbsp coconut oil
- 1 cup dark chocolate (I used @evolvedchocolate !)
- Optional: maldon salt flakes for topping
Instructions:
- Whisk together all ingredients for the filling.
- Pour into mini muffin molds OR you can roll dough into balls and make truffles!
- Once all pb mixture has been poured you can immediately begin the chocolate covering process. However if you are shaping them into balls- place in the freezer for about 10ish minutes to harden.
- To make the chocolate coating, melt coconut oil and broken up chocolate bar (or chips) in bowl by placing a shallow pot of water on the stop top to boil, put a heat absorbing mixing bowl over the pot and melt the chocolate + coconut oil in the mixing bowl. Alternatively you can use a microwave, just heat in 30 second intervals so it doesn’t burn, mixing after each heat.
- For both the mini muffin mold and the truffles, using a spoon, pour spoonfuls of melted chocolate onto peanut butter. It doesn’t have to be as seamless as a regular PB cup! Make sure to have fun with it!
- Once done freeze again and when they’re nice and hard, store in an airtight container in the freezer for months if they make it that long
