Purple Cabbage Slaw
Beautiful, raw, BRIGHT food, how can you not be about a dish like this? These colors are unreal! I am a huge fan of this slaw, it’s a true showcase of how tasty and amazing real food can be. (Also I love slaws...and acidic foods in general) . And can be paired perfectly as a side or topping to so many things, like tacos, which are a life source.
Purple Cabbage Slaw

Ingredients:
- Juice of two limes
- 2 tbs apple cider vinegar
- 2 tbs tablespoons olive oil
- 1 tbs honey or maple syrup for vegan, can also omit either
- 1 red onion, very thinly sliced
- 1 purple cabbage, shredded
- 4 radishes, thinly sliced
- 1 large carrot, shredded
- ½ bushel of cilantro, chopped
- salt to taste
- optional: coconut shreds
Instructions:
- In a large bowl, massage all ingredients together until cabbage is soft. Adjust seasonings accordingly and enjoy!
